Limoncello Cheescake Squares

Yes, I'm still on a lemon kick and can't seem to get enough!

This recipe has everything in it that I absolutely love; limoncello liqueur, biscotti, and cream cheese.



My brother David and his wife Cristin were coming for dinner so this was the dessert we had.

Everyone loved it. I had exactly a half cup of the liquer on hand so I'll be buying more and making these again SOON!

Chicken-Fajita Tostadas

Happy Cinco De Mayo!

Of course, I was going to take advantage of the day and make mexican! I made these tostadas for a change from the usual fajitas with cilantro-lime rice.



You must try this; so fresh and full of flavor!

Banana Bread



I love banana bread and could eat it just about every morning with my coffee.

In place of the walnuts, I added some chopped chocolate chunks. Easy, super moist, and didn't last long!

The Best Coffee



Yesterday my sister-in-law, Sara and I were shopping at our favorite discount store called Glennwood Foods. I mentioned before how we always find organic foods and all kinds of other gourmet specialty foods, super CHEAP!

Well, she turns to me holding this can of coffee and says, "is this coffee any good?" I was at the other end of the aisle and came running up to see if she was really holding what I thought she was holding. It sure was Illy Coffee. I wanted to scream, I was so excited and grabbed all of the cans on the shelf. 13 total. Sara only wanted 3 so I got the other 10.

When I finally looked at the price, I freaked out even more because it was only $1.79 a can!!! Sara of course thinks I'm crazy because I get this excited about coffee. But seriously it is so good that an 8 ounce can is normally $13.00.

I only had Illy coffee one other time, but have always dreamed about having again. It is so smooth and there's no bitter or after taste like other coffees. And I especially love it because it's authentic Italian coffee, simply the best!

Amazing Corn Chowder



I made the best corn chowder last week to take to my brother and sister-in-law's. So this is not the healthiest of all soups, but they were in the mood for comfort food and this is just that.

We always have this organic corn on hand in the freezer so that is what I used. I usually do not like any frozen vegetables, but this one seriously tastes so fresh and sweet like it's on the cob. It's the absolute best! My brother actually discovered it at our favorite, lovely discount store called Glenwood Foods. It has some of the best finds especially the organic foods.

I added some left over shredded roast chicken and bacon. The soup did not need the second stick of butter like the recipe suggest although, can you imagine how amazing that would of been?
This is a hearty meal-in-itself, but to top it off serve with these.
